Instructions

1: Prepare a large baking tray with nonstick parchment and extra virgin olive oil.

2: Follow the focaccia recipe to proof the dough, then tip it onto the tray.

3: Fold the dough into thirds as instructed and cover to proof for 1-1.5 hours.

4: Mix together the oregano, parsley, garlic granules, and grated Parmesan cheese.

5: Preheat the oven to 220C/430F with the shelf set to the lowest position.

6: Drizzle the dough with extra virgin olive oil and sprinkle ¾ of the herb mixture over the top. Dimple it in.

7: Cut the dough into 4 footlong rolls using an oiled knife, ensuring even cuts.

8: Spread the rolls apart and sprinkle the remaining grated cheese and herb mixture on top.

9: Bake on the bottom rack for 18-20 minutes until golden brown.
