Italian Herb & Cheese Sandwich Rolls

1: Prepare a baking tray with nonstick parchment and olive oil.

2: Tip the dough onto the tray and fold it into thirds, then flip it over.

3: Cover and proof for 1-1.5 hours.

4: Mix together oregano, parsley, garlic granules, and Parmesan cheese.

5: Preheat the oven to 220C/430F.

6: Drizzle the dough with olive oil and sprinkle ¾ of the herb mixture on top, dimpling it in.

7: Cut the dough into 4 even sandwich rolls.

8: Spread the rolls apart, sprinkle with grated cheese and the remaining herb mixture, then pat into the dough.

9: Bake for 18-20 minutes until golden brown.

10: Transfer to a cooling rack, and enjoy after ten minutes.
