Maple Bacon Donut Focaccia

1: Mix the dough and add in 2 tablespoons of maple syrup, omitting honey.

2: Fold in finely diced bacon during stretch and folds, then finish proofing in a bowl.

3: On a buttered worktop, cut the dough into 12 individual pieces.

4: Coat each dough piece with a mixture of reserved bacon fat and maple syrup.

5: Line the tray with butter and place the dough pieces in a 3x4 formation.

6: Proof again, then dimple with more butter and bacon.

7: Bake according to the dough recipe instructions.

8: Once out of the oven, slather with the brown butter maple glaze and top with crispy bacon bits.
