A delicious summer salad made with stale bread, fresh vegetables, and a tangy dressing. The dish combines crusty bread with cherry tomatoes, cucumber, bell pepper, onion, and basil, all dressed in a flavorful mix with burrata cheese on top.
Preheat oven to 165C/330F. Tear or slice bread into crouton sized hunks and place on a baking tray. Drizzle olive oil, sprinkle with salt and pepper, and bake for 15 minutes until mostly crispy.
Slice tomatoes and place into a large bowl with 1 tsp flaky sea salt and pepper. Set aside while prepping other veggies.
Slice the red pepper, onion, cucumber, and basil, and set aside separate from the tomatoes.
Whisk all of the dressing ingredients together. Squeeze the tomatoes to release juices, add the salted tomato juice/seeds into the dressing, and mix.
Mix all the veggies, croutons, and dressing together. Check seasoning and add salt and pepper if needed.
Serve on a bed of greens and top with torn burrata. Drizzle burrata with olive oil and a sprinkle of sea salt and pepper.
